Recipe: Dan Dan Pork

I have to share this recipe with you, because it was a quick weeknight meal that surprised us at how much we enjoyed it. It will be one that we'll make again! We adapted the recipe from Cuisine at Home.

Dan Dan Pork (3 servings, 1 cup per serving) Total Time = 30 minutes

Whisk:
1/2 cup low-sodium chicken broth
1/2 cup dry sherry
2 Tablespoons low-sodium soy sauce
2 1/2 Tablespoons creamy peanut butter
1 Tablespoon chili garlic sauce
1 Tablespoon cornstarch
2 teaspoons brown sugar
2 teaspoons toasted sesame oil

Heat:
1 Tablespoon peanut oil
1 pound ground pork (we used Salt and Pepper Sausage from Fresh Fork)
1 Tablespoon fresh minced garlic
1 Tablespoon fresh minced ginger
1 cup fresh mushrooms
1/2 cup diced onion
1/2 cup minced fresh cilantro
Cooked stir-fry noodles
Chopped dry-roasted peanuts

Whisk together the broth, sherry, soy sauce, peanut butter, chili garlic sauce, brown sugar, cornstarch, and sesame oil.
Heat peanut oil in wok or large skillet over medium-high heat.
Add ground pork or sausage and stir-fry until cooked through (5 minutes).
Add in mushrooms and onions, cook through.
Stir in garlic and ginger.
Stir in broth mixture.
Simmer until thickened (2-5 minutes).
Stir in cilantro.
Serve over noodles and garnish with peanuts.

We also topped ours with a couple drops of Sriracha.
Enjoy!
